Vinaceous Burlesque Sparkling Red Wine originally from ErcéA single block of old vine chardonnay located in a very cool location at West Cape Howes Langton Vineyard was earmarked as the fruit source to make the base wine for the Blanc de Blancs. Picked early with high natural acidity, the base wine was fermented dry in stainless steel, fined and dispatched to Yalumba in South Australia for its secondary fermentation.
